Super Quick Strawberry Chia Seed Jam

Celebrate the beginning of summer with this strawberry jam, made with fresh local strawberries and the addition of some healthy chia seeds. This easy recipe is the perfect addition to yogurt parfaits or as a topping for waffles. Try using the jam in some peanut butter and jelly muffins and surprise dad For Father's Day. Short on time, spread it on crusty bread with a cup of hot coffee!
Strawberry Chia Seed Jam
Ingredients
- 4 cups fresh strawberries (raspberries, blueberries or blackberries)
- 4 tbs. chia seeds
- 2 tbs. lemon juice
- 6 tbs. maple syrup
- optional: fresh culinary grade lavender flowers (2 tsp.)
- pinch of salt
Instructions
Slice strawberries and place in medium sauce pan over medium-high heat, stirring occasionally, until the fruit is heated through and begins to break down and bubble. Use a spoon or potato masher to mash the fruit to your desired consistency.
Place in a jar and keep in the refrigerator for up to 1 week or you can freeze it for up to 2 months.
