Vegan No-Churn Key Lime Pie Ice Cream

  • 2 cups vegan or regular dairy whipping cream (for vegan, try Califa Farms Heavy Whip)
  • 14 ounces sweetened condensed regular or coconut milk (Nature’s Charm brand sweetened condensed coconut milk)
  • Juice & Zest of 2 limes
  • 1 cup roughly chopped graham crackers (can also use gluten free)
  • 1/2 cup white chocolate chips

  1. In a large bowl, use a hand mixer or a stand mixer to whip the cream until stiff peaks occur, be careful not to over whip. The cream will be done when you pull the beaters out and the cream leaves high peaks.
  2. In another large bowl, whisk the lime juice and zest  into the sweetened condensed milk. Gently fold in the whipped cream with a spatula, slowly incorporating the two mixtures together so it stays light and aerated.
  3. Add in the chopped graham crackers and white chocolate chips.
  4. Place in a shallow bowl or loaf pan to freeze
  5. Freeze for 4-6 hours.
Makes enough for 10 small servings.
