Make Your Valentine a Sweet Breakfast!

Rise a little earlier, quietly head to the kitchen, and prepare delightful chocolate waffles paired with a cozy cup of coffee, hot chocolate, or tea for your loved ones. Treat yourself too! This recipe is incredibly simple and can be effortlessly adapted with gluten-free flour or enhanced with oat flour for added whole grains.
Chocolate Waffles
Ingredients
- 1 2/3 cups all-purpose flour (or Gluten free flour)
- 1/2 cup granulated sugar
- 1/3 cup unsweetened, Dutch-processed cocoa powder
- 1 TBS. baking powder
- 1/2 tsp. salt
- 1 tsp. espresso powder (optional)
- 1 1/2 cups buttermilk
- 1/2 cup unsalted butter, melted (or coconut oil)
- 2 large eggs
- 1 1/2 tsp. vanilla extract
- Toppings: berries, confectioner's sugar, candy hearts, hemp seeds, syrup
Instructions
- In a bowl, sift together the flour, cocoa powder, sugar, baking powder, salt and espresso powder. Add the buttermilk, melted butter, eggs and vanilla, and whisk until smooth
Preheat your waffle iron to your preferred setting – I like to use the "crisp" setting on mine.
- Measure the batter into your waffle iron, using about 3/4 cup of batter for each waffle (depending on the size of your waffle iron). Cook for 4-6 minutes, until they are crisp on the outside, but still fluffy on the inside. Note that waffles tend to get more crisp after you take them out of the waffle iron and the steam escapes, so be careful not to over-cook these, as it's difficult to tell from the color when they're ready.
Makes about 4 waffles. Double the recipe for a larger amount.
Top as desired or set up a toppings bar with whipped cream, berries, syrup, chocolate chips, bananas, etc.
